Why do I feel so hungry even two months into new diet/controlled sugars?

I was diagnosed as type 2 in December of last year. Ever since then, I’ve completely changed my diet, got my A1C down from 11.3 to 7.6 and lost 8 pounds. At first, I adapted to my new lifestyle pretty easily. I did occasionally miss eating how I used to obviously but my hunger seemed to adjust as well. But now… I’m so hungry. All the time. I’ve started feeling this way after my period ended and honestly, it has me feeling discouraged and disappointed in myself. I just don’t understand why I feel this way now, when I seemed to have adjusted decently at the start. 🫤
